This is an authentic Mexican dressing used in many recipes. Chipotle is pronounced 'Chiy-poult-lay'

Sweet Chipotle Dressing


1 tbsp yellow onion, diced
1 tbsp garlic, chopped
2 tbsp dijon mustard
1/4 tsp ground cumin
1/2 cup diced fresh tomatoes
2 tbsp chopped fresh cilantro
2/3 cup rice wine vinegar
1 tsp salt
2 tbsp honey
2 tbsp chipotle puree
1/2 cup olive oil

Place all ingredients, except the oil; into a food processor and blend until very smooth. Slowly add the oil, in a thin stream, while the food processor is still running and blend until all of the oil is incorporated and the vinaigrette is completely emulsified. it will keep 3 to 5 days in an airtight container.
