This tastes so much better than the storebought, canned cranberry sauce. And the great thing about cranberries is that they freeze well. You can stock up on them now while fresh, and use year round in all kinds of recipes.

Spiced Home made Cranberry sauce
Thumb of 2010-11-10/Lynxx/ae7277
Ingredients:

4 cups fresh cranberries
11/2 cups water
1/2 cup Orange juice
2 pkg. Knoxx unflavored gelatin
3 cups sugar
1 tsp fresh ground cinnamon
1/2 tsp fresh ground cloves (If you have a coffee bean grinder, works perfect)
1 good grate of fresh ginger root (use smallest grate-side/cheese grater)
cold water

Wash the cranberries and drain; set aside. combine remaining ingredients in a large saucepan, bring to a boil. Add the cranberries; cook 7 to 10 minutes, or until all cranberry skins pop. Reduce heat, and simmer 45 minutes, stirring occasionally. To a bit of cool water, dissolve the gelatin. Add slowly to the simmering cranberry mixture, stirring constantly. Allow to simmer another 15 minutes.Remove from heat and allow to cool. Chill until ready to serve. Makes about 2 cups.
Note: You can also place in 2 cup Jello mold for a festive presentation. Hurray!
