Devil's Island Eggs
Thumb of 2010-11-14/Lynxx/41e5ee
Ingredients:
6 hard boiled eggs, cooled
2 slices bacon, cooked and crumbled
1/3 cup Thousand island dressing
24 pimento strips
paprika

Slice eggs in half lengthwise. Carefully remove the yolks. Mash the yolks in a small bowl, stir in bacon crumbles and dressing. Stuff each half egg white with mixture. Garnish with dash paprika and two crossed pimentos.

well, that's totally different than I've ever had.

12 dozen hard boiled eggs, cooled, peeled, split in half
Sweet relish, yellow mustard, paprika

Remove the yolks, moosh the yolks. Mix to taste the sweet relish & the mustard with the yolks, spoon back into the egg halves. Sprinkle with paprika for color.

Please note: these are 100% better on Easter day than any other day of the year, especially if they're green/blue/pink/purple/etc. :D

I don't think I've ever had a deviled egg with relish Toni, except for the fine bits that are in the Thousand island. I'll have to give this a try :)

Mom would sometimes mix in apple cider vinegar, too. But I can't stand to keep the stuff in my house.. too acidic! And I was just thinking that I think there was mayonnaise in there, too, but not 100% sure. I don't get these very often cuz DH doesn't like eggs, so no sense in buying a bunch of eggs unless I'm baking.

Yes Toni, almost every deviled egg recipe i've ever seen had mayo in it, sometimes mixed with mustard too. MMM :)
