CROCK POT RECIPES forum: Fiesta Beef Bowl

1-1/2 lbs. boneless beef round steak
10-oz. can diced tomatoes & green chilies
1 garlic cloves, minced
1 tsp. dried oregano
1 tsp. ground cumin
1/4 tsp. salt
1/4 tsp. pepper
1 tsp. chili powder
1 med. onion, chopped
16-oz. can pinto beans, rinsed & drained

3 cups hot cooked rice
Shredded cheddar cheese
Sliced ripe olives

Put round steak in 3 qt. crock pot. In small bowl mix tomatoes, onion, garlic and seasonings; pour over steak. Cover and cook on low for 8-9 hours. Remove meat to plate. Add beans to crock pot, put meat back on top. Cook for another 30 min. or until heated through.

Place rice in bowls, top with meat and bean mixture, then top with cheese, olives and guacamole.
