Fruit flavored Marshmallows made by you will taste better than the store-bought varieties, and are fun and easy to make.
Fruit flavored Marshmallows, Colored
Thumb of 2010-11-13/Lynxx/59a0cf
2 (1/4 oz) envelopes Knoxx unflavored gelatin
1/4 cup cold water
1 cup boiling water
1/4 cup fruit flavored gelatin (dry Jello mix)
2 cups granulated sugar
*Approx. 1/2 cup powdered sugar, tinted to color of the fruit flavored gelatin

Lightly butter a 9 inch square baking pan, set aside. In a large bowl, combine unflavored gelatin and cold water. let stand 5 minutes. Add boiling water and flavored gelatin. Stir with a wooden spoon until dissolved. Add sugar.
Using electric mixer on high speed, beat until the mixture is thick and fluffy, about 30 minutes. Pour into prepared pan and let stand at room temperature until firm, about 2 hours. Using a knife that's been dipped into hot water, cut marshmallow pieces to desired size. Roll in powdered sugar, shaking off excess. Store in airtight tupperware.

*Tint by placing the powdered sugar in a large bowl, and adding a very tiny bit of paste food coloring to it. Use a whisk to throughly mix the color in. I like using a tall bowl, so i can mix faster if by hand. But electric mixer is easier and faster, does a better job.
