Compound butters are just mixtures of butter with herbs or other ingredients. That means you can get creative and come up with your own.


When compound butters melt, they turn into sauces, not just melted butter. Make these three and put them in the freezer -- you'll have three great sauces you can use at any time. Try them on pastas, meats, and vegetables.

They're easy to make, but I've still got a few tips. Get the butter soft before mixing. And if you are adding a liquid, add it only a tiny bit at a time, so it mixes in well. Finally, if it's too soft to shape after all that, stick it in the refrigerator for 10 to 15 minutes.

Roasted shallot and vermouth butter is my favorite for grilled salmon With ingredients like that, how could you ever go wrong?

List of Ingredients
Step One For the Cilantro Pesto butter, process every-
thing but the butter in a food processor. Then blend into
room-temperature butter.
Step Two Lay a piece of heavy weight plastic wrap
(like Saran Wrap) on the counter. Then mound the
butter in a line down the plastic.
Step Three Now shape the butter into a cylinder. Wrap
the plastic around the butter, and roll it back and forth into
shape.
Step Four Twist the ends tightly. This really forms a
perfect cylinder shape. Now, freeze it and cutoff in
medallions as needed.

Preparation
Roasted Shallot and Vermouth Butter

Drizzle with Olive Oil, and Roast 45 Minutes in 350° Oven:

2 small shallots, sliced in half
Mince Shallots, Blend into:
1/2 pound butter, softened
Blend into Butter, a Tablespoon at a Time:
1/4 cup plus 1 T. vermouth, warmed slightly

Cilantro Pesto Butter

Process in Food Processor:

2 cups fresh cilantro, packed
1/2 cup goat cheese
4 t. toasted walnuts
2 T. olive oil
1 t. lemon juice

Blend into:
1/2 pound butter, softened

Orange Butter

Combine:
3 T. freshly-squeezed orange juice, room
temperature
1-1/2 T. orange zest, loosely chopped
3 T. crushed pineapple, well-drained, minced
2 t. Grand Marnier liqueur
Blend into, a Little at a Time:
1/2 pound butter, softened
