List of Ingredients
1 large eggplant with the skin on
1 carrot, peeled and cut in a small dice
2 celery stalks, cut into a small dice
10 cherry tomatoes uncut
1 green or yellow zucchini cut into a small dice
1 small onion cut into a small dice
2 gloves of garlic cut into a small dice (optional)
1/2 tsp red pepper flakes (optional) |
Preparation
Preheat oven to 350 deg.
Place eggplant on a piece of foil and cook for about 45 minutes or until the eggplant feels soft to the touch.
While it is baking take all the other ingredients except the tomatoes
and place in a fry pan with some oil heated to med high and saute them until soft. Once they are soft add the garlic (if using)and stir to combine. Lower the heat to a simmer.
remove the eggplant from the oven (put the oven on broil) )and carefully cut down the middle lenghwise. remove the pulp from the eggplant being careful not to pierce the skin. add the pulp to the fry pan and along with the other vegetables and give it a good stir.
take the vegetable mixture and fill both sides of the eggplants and aded the tomatoes also to both sides.
sprinkle some grated cheese, or sliced mozzerella (optional) on top
place the eggplant onto a rimmed baking dish and place in oven and cook until the cheese and tomatoes begin to char a bit.
