Recipe Title: Asparagus with fresh strawberries
Contributed by: Jill Nicolaus
List of Ingredients
Fresh asparagus stalks
Fresh ripe strawberries
Balsamic vinegar, maybe a teaspoon per cup of sliced strawberries
I was inspired by finding good fresh asparagus and strawberries together in season at Sam's Club. I knew I liked a little sprinkle of balsamic vinegar on steamed asparagus, and I knew a little balsamic could bring out the flavor of strawberries, but I'd never tried them together. It was a hit -- and so pretty on the plate!
You'll want a generous handful of strawberries per serving. Rinse, hull, and slice the berries. Toss them with a bit of balsamic vinegar -- and this is the time to get out the really good stuff, in the bottle marked "aged 20 years" if you have it. Let the strawberries sit while you prepare and cook the asparagus.
We love asparagus, so I used about half a pound of stalks per serving. Trim off the tough base of the stalks (if you bend the stalk, it will snap at just the right place), and give them a rinse. Put them in a loosely covered microwavable dish to steam, probably not longer than 4 minutes for a pound or until just tender. (Limp asparagus is not delicious asparagus!)
Arrange a pile of hot asparagus stalks on the dinner plate. Top with the balsamic strawberries... spooning the strawberries across the middle of the asparagus makes a pretty presentation. Serve immediately (or not, if you don't care if the asparagus is hot... it would probably be tasty chilled, even).
We happened to have lamb chops and mashed potatoes with this, but honestly I could have eaten a big plate of asparagus and been more than happy (although the lamb was tasty!).
