This is my own original recipe, and so very easy to prepare. I often make it just for myself, for a quick and healthy dinner. |
List of Ingredients
1/2 onion, chopped
garlic
saffron
salt and pepper
1 cup reduced chicken broth or vegetable stock
equal amount of canned chopped tomatoes
a bit of tomato paste, if you want it a little thicker
Red skinned or fingerling potatoes
Seafood, what ever you like |
Preparation
Sautee the first four ingredients about 5 minutes, until the flavors are blended.
Add chicken broth and canned chopped tomatoes plus tomato paste if you wish
Bring to a boil and then add then add some little red skinned or fingerling potatoes, and low boil, covered, until potatoes are tender. Then add the seafood - whatever you like. I use peeled and de-veined large shrimp, a few large scallops, chunks of halibut, some mussels. Simmer until seafood is done, but don't over-cook. Ladle a nice big portion into a bowl and enjoy!
