Recipe Title: Pot Roast with Veggies

List of Ingredients
1 lb. lean boneless chuck roast, trimmed
Veg. cooking spray
1 /4 cup water
1 /4 t. salt
1 /8 t. pepper
2 medium onions, peeled and sliced
2 stalks celery, sliced
4 large carrots, scraped and sliced
2 medium-size red round potatoes, peeled and cubed

Preparation
Cook roast over medium heat in a small Dutch oven coated with cooking spray until browned on all sides
Add water and next 4 ingredients
Cover and bake in 350 deg. oven for 1 hour and 15 minutes
Add carrot and potatoes
Bake additional 1 hour or until meat and veggies are tender
Transfer meat and veggies to serving platter
cut roast into 2 - oz. slices

Cooking Time & Temperature
350*F 1 hour 15 minutes
