Recipe Title: Snow Day Soup

I wanted hot soup today. We have 6+ inches of snow on the ground and have been out playing and taking pictures. This is not a heavy soup but it delivers protein and much-needed warmth. Next time I will add some carrots. I was purposely going low on carbs in the soup so I could enjoy my favorite carbs on the side.

I make my soups right in the soup pot, starting with any browning/sauteing to do.

We are trying to get more 'real' with our portion sizes, so I figured the nutritional values for one-cup servings

List of Ingredients
1 1/4 lb chicken breast tenders, tendons removed, diced to about 1/2 inch pieces
2 lg cloves garlic minced
1/4 yellow onion diced fine
1 T olive oil

2 cans great northern beans plus liquid
1 can petite diced tomatoes with chipotles (Food Club)

1/2 tsp thyme
1 tsp oregano
1 T basil
(all dried herbs)

5 cups homemade chicken stock

calories, 152 mg sodium, 5 g carbohydrates

Preparation
Lightly brown the chicken in the olive oil and add the garlic and onion and cook gently till the onion is translucent

Add beans plus liquid & diced tomatoes with chipotles

Add thyme, oregano, & basil.

Add 5 cups homemade chicken stock

Heat gently for a while. Taste and add salt and pepper if you like. Serve with homemade bread or rolls.
