I wanted hot soup today. We have 6+ inches of snow on the ground and have been out playing and taking pictures. This is not a heavy soup but it delivers protein and much-needed warmth. Next time I will add some carrots. I was purposely going low on carbs in the soup so I could enjoy my favorite carbs on the side.
I make my soups right in the soup pot, starting with any browning/sauteing to do.
We are trying to get more 'real' with our portion sizes, so I figured the nutritional values for one-cup servings |
List of Ingredients
1 1/4 lb chicken breast tenders, tendons removed, diced to about 1/2 inch pieces
2 lg cloves garlic minced
1/4 yellow onion diced fine
1 T olive oil
2 cans great northern beans plus liquid
1 can petite diced tomatoes with chipotles (Food Club)
1/2 tsp thyme
1 tsp oregano
1 T basil
(all dried herbs)
5 cups homemade chicken stock

Preparation
Lightly brown the chicken in the olive oil and add the garlic and onion and cook gently till the onion is translucent
Add beans plus liquid & diced tomatoes with chipotles
Add thyme, oregano, & basil.
Add 5 cups homemade chicken stock
