List of Ingredients
|2 tbs butter|
1 tbs vegetable oil
1 small onion chopped
2 medium celery stalks, cdhopped
2 tbs all purpose flour.
4 cups chicken stock
1 cup smooth peanut butter
1/4 cup heavy cream or half and half
1 1/2 tsp salt
1 tsp ground red pepper
1 tsp hot red pepper sauce
2 tsp fresh lemon juice
3 tbs choped dry roasted peanuts
1/4 cup chopped scallion greens
|heat in a soup pot, over medium low heat until melted|
butter & vegetable oil.
Add and cook, stirring until tender but not browned, about 5 to 10 minutes:
onion & celery.
Stir in flour.
Reduce heat to low and cook, stirring for 5 minutes.
Stir in chicken stock.
Simmer stirring often until the soup begins to thicken, about 5 to 10 minutes and stir in:
peanut butter, heavy cream or half and half, salt, red pepper, hot red pepper sauce.
Heat through but do not boil.
Stir in 2 tsp fresh lemon juice.
Ladle into warmed bowls.
dry roasted peanuts and chopped scallion greens
if you are preparing this soup a day ahead of time reduce the ground red peppers and the hot red pepper sauce as the flavor intensifies over time
