Beets are funny…there’s just no in-between! You either Love them or Hate them! When my Dear Man and I first got together I was trying to impress him with my culinary skills and invited him for dinner. I told him I had made a really nice “Beet Soupâ€. Wish I had of had a camera to capture the look on his face as he apparently HATED Beets! Being the nice person that he was though, he ate it…and low and behold, it’s something he really likes to this day! (ummmm…maybe he’s still just pretending! Haha)
This is a very pretty soup and you can either eat it hot or cold. I prefer hot and depending on which season you buy your beets it can be quite sweet. This is the Hungarian variation of Borscht.

List of Ingredients
About 9 medium sized Beets
2 large Onions diced
2 stalks of Celery chopped
2 quarts of Water
¾ cup of Sour Cream
2 tablespoons flour
3 tablespoons Butter
Salt
Pepper
¼ cup of white vinegar |
Preparation
Peel and cut your beets into ½ inch squares. Place in a large stock pot with the onion and celery. Cover with the Water and bring to a boil. Lower the heat and simmer for about an hour. Add Salt and Pepper to taste.
Remove about 2 cups of the soup and blend thoroughly in a blender or food processor. Return this mixture to the pot. In another saucepan, melt the butter, add the flour and stir to make a rioux.. When thickened, add about a cup of the liquid beet stock and thicken. Keep adding if it gets too thick. Add in the sour cream and keep stirring until everything is smooth and thick. Add this mixture back into the soup pot.
Let the soup simmer for about another ½ hour. At the end, adjust your salt/pepper and add the vinegar. It should give it a little tang. If you were lucky enough to find Beets with greens – Wash and cut up the greens and add them to the soup!
