Pour Sauvignon Blanc, Chenin Blanc or a rose and pass a basket of warm miniature blueberry or corn muffins.

List of Ingredients
2 pounds cooked large shrimp, shelled and deveined
2 papayas, peeled, seeded and sliced
2 mangoes, peeled, seeded and sliced (optional)
1/2 fresh pineapple, cut into spears
2 avocados, peeled, seeded and sliced
1 or 2 kiwifruit, sliced
Butter lettuce

Dressing
1/2 cup whipping cream
2 tablespoons grated sweetened coconut
2 tablespoons lime juice
1 tablespoon grated lime or lemon rind
2 teaspoons honey
1 teaspoon grated fresh ginger
1/4 cup mayonnaise
Toasted coconut, chopped
macadamia nuts, grapes and mint (garnish)

Preparation
Arrange shrimp and fruit attractively on lettuce on large platter or individual salad plates.
Combine all dressing ingredients except mayonnaise in blender and whirl until fluffy. Fold mixture into mayonnaise. Place a dollop of dressing on each salad and accompany with toasted coconut, macadamia nuts, grapes and mint.

Slices of cooked chicken breast may be substituted for the shrimp.
