Recipe Title: Cold Zucchini Soup With Cinnamon, Cumin And Buttermilk

List of Ingredients
2 1/2 cups homemade chicken or vegetable stock or store bought
1 pound zucchini, ends trimmed, chopped into large chunks
1 tbs olive oil
1 cup chopped yellow or white onion
1/2 tsp seeded and minced serrano Chiles, or to taste
1/2 tsp whole fennel seeds
1/2 tsp ground cinnamon
1 tsp ground cumin
1 1/2 cups buttermilk
sea salt and freshly ground pepper

garnish if you like with chopped fresh cilantro or mint leaves

Preparation
In a soup pot over high heat, bring the stock to a boil and add the zucchini. Reduce the heat and simmer, covered for 4 to 5 minutes, or until the zucchini is partly tender but still bright green. Remove the pot from the heat and let cool.

Meanwhile, heat the olive oil in a small, nonstick frying pan. Add the onion, chili, fennel, cinnamon and cumin and saute until the onion is soft but not brown and the spices are fragrant.

Combine both mixtures together in a blender or food processor and pulse until well chopped but still with some texture. Pour into a bowl, stir in the buttermilk, then season with salt and pepper.

Chill for at least 2 hours. Taste again at serving time, adding more salt and pepper if needed. Serve garnished with a sprinkling of cilantro or mint, or a slice of lemon or lime.

Note : you can chop the zucchini into a puree if you wish
