1/4 cup pine nuts
olive oil cooking spray
2 cloves garlic, finely chopped
2 bags (10 ounces each) washed fresh spinach leaves
1/4 teaspoon salt
1/4 teaspoon pepper
lemon wedges (optional)

Preparation
Gently toast nuts in a dry sauté pan until they start to brown. Set aside. In a very large pan, heat olive oil and garlic over medium heat until garlic
starts to turn golden (do not allow garlic to brown).
Add one third of the spinach; sauté until spinach wilts. Add remaining spinach and pine nuts in batches, seasoning with salt and pepper as it cooks. Serve
