Recipe Title: Collard Greens

List of Ingredients
olive oil to coat a pan,
3 strips of thick bacon
small piece of pancetta
a large diced onion
2 cloves of minced garlic
collard greens
3 cups of chicken stock,
pinch of hot pepper flakes
¾ teaspoon of black pepper

Preparation
For these delicious little darlins…I took some olive oil to coat a pan, fried 3 strips of thick bacon until crisp. I also had a small piece of pancetta left from some pasta I made the other day and diced it up. Removed the bacon, crumbled it and added it back in the pan. Added a large diced onion until softened. Added 2 cloves of minced garlic and cooked until it became aromatic. I added the Greens and cooked them until they started to wilt. Then added 3 cups of chicken stock, a pinch of hot pepper flakes and about ¾ teaspoon of black pepper. I covered the pot and simmered it for about an hour. It was delectable! Maybe I'll try it with some smoked Hamhocks next time! I've also heard of using smoked Turkey legs!
