Recipe Title: Paella With Chicken, Clams And Shrimp

List of Ingredients
1/4 cup olive oil
2 pounds boned and skinless chicken thighs, cut in half
salt and ground pepper
2 cups (1 large) white onion, chopped
2 tbs sliced garlic
1 cup diced problano or other green chlie
2 cups medium grain rice
1/2 cup dry white wine
4 cups hot homemade chicken stock or store bought
1/4 tsp saffron threads
1 cup diced fresh or drained canned tomatoes
3 or 4 fresh thyme sprigs or 2 teaspoons dried
1 tsp fennel seeds
2 pounds fresh manita or littleneck clams, well scrubbed
1 pound large (16 to 20 size) shrimp, peeled and deveined.
2 cups cooked fresh or frozen giant lima or fava beans

Preparation
Heat the olive oil in a large, shallow pan over medium high heat. Season the chicken well with salt and pepper, and lightly brown it in the pan on all sides, about 5 minutes. Add the onions, garlic, and chile and stir for another 2 minutes or until the vegetables just begin to color. add the rice and stir for a minute to coat the grains.

Add the wine, stock, saffron, tomatoes, thyme and fennel and stir gently. Bring to a boil and nestle the clams down into the rice mixture..cover and cook until the clams open (discard any that don't) and the rice is tender, about 15 minutes. Nestle the shrimp into the rice mixture, cover and cook for another minute or so, until the shrimp are pink. (they will continue to cook as they sit in the mixture). Remove from the heat, stir in the beans, taste and season with salt and pepper and serve.
