List of Ingredients
|4 cups cooked rice, brown or white, fluffed and cooled|
2 eggs, lightly beaten and scrambled
4 ounces cooked ham, diced (substitute any cooked meat you have on hand)
3/4 cups frozen peas and carrots, thawed (or use any leftover cooked veg)
1 scallion, thinly sliced
1 teaspoon kosher salt or to taste
1 tablespoon regular (or light) soy sauce (use dark soy or mushroom dark soy if you want your rice to have a dark color)
1 - 3 tablespoons oil
ground white or black pepper to taste
1 - 2 teaspoon Asian sesame oil (optional)
|1. Heat wok. Add 1 tablespoon oil. Stir-fry peas and carrots for 1 minute. Add ham (or cooked meat), stir fry another minute. Remove to a plate and set aside.|
2. Add 1-2 tablespoon oil to wok. Add salt and rice. Stir-fry until rice is coated with oil and heated through. Mix in soy sauce.
3. Add ham, peas and carrots and scallion. Mix well. Stir in scrambled eggs, ground pepper and sesame oil. Enjoy.
NOTE: if you are short on time, or you just don't feel like it, you can skip step 1 and go directly to step 2. Just make sure that during step 3 your ham and vegs are heated through. Let me know if this is not an super easy recipe.
By the way, you do not want to make fried rice in your rice cooker. Use a frying pan if you do not have a wok. You may need a bit more oil if using a frying pan.
