List of Ingredients
|White wine with basil sauce|
750ml white wine (Chenin Blanc works very well)
Â½ cup shallots
1/3 cup fresh sweet basil thinly sliced
1 pint heavy cream
3 tbsp butter
3 tbsp flour
2 tbsp extra virgin olive oil
In a small saute pan melt butter over medium heat. Stir in flour and continue to stir until mixture is honey brown. Remove from heat and set aside.
Heat olive oil in a 3 quart sauce pan. Add shallots and saute until light brown.
Pour in wine and let simmer until reduced to to 1/3 of original volume. Add flour/butter mixture while constantly stirring until dissolved. Reduce heat to medium low and slowly add cream, stirring until completely mixed. Add sliced basil and heat to serving temperature. Do not allow to boil.
Prepare linguine or fettuccini pasta according to package directions.
Flake Â¼ pound of hard smoked salmon with a fork.
Finely dice 1 ounce of sun dried tomatoes.
Put a serving of pasta on a dinner plate and ladle a generous portion of White Wine with Basil Sauce over the top. Sprinkle with flaked salmon and diced tomatoes. Garnish with a sprig of fresh basil leaf. Shredded Parmesan cheese optional.
Dip slices of baguette into melted butter and olive oil, sprinkle with fresh grated Parmesan cheese and toast under broiler until golden brown. Serve with pasta and the same type of wine used to make the sauce.
