List of Ingredients

2 cups finely diced rhubarb 1/2 sweet red pepper 1/2 cup sweet yellow peppers cilantro 3 finely chopped green onions 1 or 2 minced chili peppers 1 or 2 tablespoons fresh lime juice brown sugar salt pepper

Preparation

Blanch rhubarb in boiling water for 10 seconds. Refresh under cold water. Combine with sweet red peppers, sweet yellow peppers and cilantro. Stir in finely chopped green onions and minced chili peppers. Stir in fresh lime juice. Add brown sugar, salt and pepper to taste. Serve with chicken or fish.
