List of Ingredients
6-7 large Yukon Gold potatoes
1 tablespoon salt
8 tablespoons butter
1/2 cup milk
1/2 lb. fresh mozzarella, cubed
3 tablespoons grated Romano cheese
1/8 lb. hard salami, minced
salt and pepper to taste
1/2 cup fine breadcrumbs |
Preparation
Preheat over to 350 deg.
Peel potatoes, cut into 1" chunks. Add salt to water and boil until tender. Mash the potatoes, then add 6 tablespoons of butter and the milk.
Whip potatoes with mixer until smooth. Reduce speed to low and add cheeses and salami; mix until blended. Add salt and pepper to taste. Use 1 tablespoon of butter to grease bottom and sides of casserole dish. Coat bottom and sides of dish with breadcrumbs. Spoon potato mixture into dish and dot with remaining butter. Bake approx. 30 minutes until golden brown.
Note: VERY hot when it comes out of oven. |
