3 1/2 pounds new potatoes (about 12 medium sized potatoes)
2 garlic cloves, minced
1/3 cup olive oil
1/2 tsp. pepper
1 tsp. salt
dash of nutmeg
1/3 cup hot chicken broth
2 bay leaves |
Preparation
Start by washing and rinsing about 3 1/2 pounds of potatoes.
That's about 12 medium-size potatoes.
Now keep the skins on because it enhances the flavor.
Then cut them into 1/4 inch slices and place them in a bowl.
Prepare a simple marinade with the garlic cloves, olive oil, pepper, salt, nutmeg
Stir well and pour over the potatoes.
Once they are completely coated, place the slices in a baking dish so that one overlaps the other and pour about 1/3 cup of hot chicken broth over them.
Now just tuck in a couple of bay leaves, cover this with foil and bake it for about 45 minutes at 350°F.
Then uncover the dish, brown the potatoes for about 10 minutes longer. |
