This is a little different from the usual stuffed peppers in that there is no meat or rice in the recipe but only potatoes. |
List of Ingredients
You take about 6 green peppers (try to find ones that can stand up on their own) and cut the tops off, removing the seeds
5 potatoes peeled and cut into 1/4 inch dice
2 tbs grated cheese
can of peas
oil for frying
large can of tomato sauce
salt and pepper to taste |
Preparation
Preheat oven to 350 degrees
Add oil to a large frying pan and cook the potatoes until soft but not browned
In a large bowl add the potatoes, the can of peas and the 2 tbs of grated cheese, and the salt and pepper and mix well.
Spoon the mixture into the peppers. place the peppers into a 9 x 13 inch baking dish or larger and cover with aluminum foil. place in oven for 45 minutes and then remove the foil and pour the sauce over the peppers. cook for another hour uncovered. |
