Recipe Title: artichoke and olive sauce with shell shaped pasta

Note from the Diva
This is an easy dish because the sauce is uncooked and can be made days ahead then all you have to do is cook the pasta and you are set. We serve this for one of our vegetarian friends for dinner.

List of Ingredients
1 6 1/2 ounce jar marinated artichoke hearts, drained and coarsely chopped
1 cup diced red bell peppers
1/3 cup chopped, pitted green or black olives or a combination
1/3 cup chopped lightly toasted walnuts
3/4 cup loosely packed fresh basil leaves. chopped (you should have about 1/3 cup
1 tbl minced garlic
3/4 cup extra virgin olive oil
1/3 cup grated pecorino or Parmesan cheese plus extra for garnish
1 tsp finely chopped lemon zest
drops of fresh lemon juice to taste
freshly ground black peppers to taste
12 ounces of shell shaped pasta (conchiglioni)

Preparation
Combine the artichokes hearts, peppers. olives, basil, garlic, olive oil, cheese, zest, juice and pepper in a serving bowl (or a storage container if you are making it ahead and stir it all together. store covered in the refrigerator for up to 3 days. bring it up to room temperature before using.

Cook the pasta in lightly salted boiling water until al dente. drain and toss with the sauce. Serve immediately with a sprinkling of additional cheese, if desired.
