This recipe was one of my mother's when she fed a large family on a small budget. God bless those dear gals that could feed good food to so many on so little. |
List of Ingredients
2 c dried limas
1/4 # bacon, chopped
1 onion, sliced
1 clove garlic, minced
1.4 c veg. oil (w/ bacon grease)
1 1/2 T mustard
2 tsp worchestershire sauce
1 1/2 tsp chil pwdr
1 tsp salt
1 10 oz can tomato soup
1/3 c vinegar
1/4 c brown sugar
extra chopped bacon for top |
Preparation
Soak beans over night. drain, rinse and cover w/ water and the chopped bacon. Cook slowly til beans are tender. Drain but reserve 1 1/2 c liquid. Saute onion/garlic in oil. Add remaining ingredients including some of the reserved liquid EXCEPT for limas and the chopped bacon. Mix well and simmer additional 5 min. Layer lima's and sauce in a casserole. Top w/ bacon. 400 degree oven 45 min. |
