Also known as Liver Box in Finland.

This is my favorite dish when I visit Finland. My Finnish Mom always makes sure she has plenty for me to feast upon. Even non-liver-lovers go back for seconds! Serve with melted butter to pour over the individual portions, and lingonberries or cranberry sauce.

List of Ingredients
3 cups cooked rice
3 teaspoons salt
2 1/2 cups milk
1/2 teaspoon white pepper
1 egg, beaten
1/2 teaspoon ground marjoram
2 tablespoons butter
1 cup raisins
1 medium onion, chopped
1 pound liver, sliced
4 tablespoons dark corn syrup

Preparation
Mix together the rice and milk, add the egg. Heat the butter in a frying pan, brown the onion in it, and add to the rice-milk mixture. Stir in the syrup, salt, pepper, marjoram, and raisins. Put the liver through a meat chopper (this is easier to do when the liver is partially frozen), using a coarse blade, or use a sharp knife to chop it very fine. Stir the liver ihto the rice mixture and pour the whole into a buttered 2-quart casserole. Bake in a moderate oven (350 degrees) for 1 hour or until the casserole is set. Serve hot.

To those interested..."Maksalaattikko and porkkanalaatikko" is literally and laughingly translated to mean "liver box" and "carrot box" in English.
However a "laatikko" can be a carton, container, drawer and yes even a box. Actually these dishes should be called casseroles, cause that's what they are...casseroles. Casserole in Finnish is a "laatikko."

After saying all that, like you I love maksalaatikko and the recipe you have posted is an excellent one. I haven't had it for many years, since my Mom passed, but now that Im thinking about how delicious it is, We're going to have it as part of our Christmas Eve meal !!
