Here's a quick, healthy stew that should please any Mexican food lover!

List of Ingredients
2 lb boneless, skinless chicken breasts, cubed
1 T olive oil
3 ears of corn, corn sliced from the cob
2 stalks of celery, chopped
2 medium potatoes, peeled and coarsely chopped
3 cans of diced green chilies
4 c organic chicken broth
2 t cumin
1 t oregano

Preparation
In a large pot, lightly brown the chicken in the olive oil.

Add remaining ingredients and cover. Simmer for one hour.

Serve with warm flour or corn tortillas.
