Note from the Diva
Saffron is one of the most expensive spices, coming from the crocus flower. It adds a delicate flavor to rice and a very rich yellow color. If you can not find saffron or want a less costly spice, substitute turmeric. The flavor is not the same, but it will add the color and a equally full flavor.

List of Ingredients
1 c brown rice
1/3 cup whole wheat angel hair pasta, broken pieces
1 T olive oil
2 c vegetable stock or chicken stock
pinch of saffron or 1/4 t turmeric
1/3 frozen peas, thawed

Preparation

In a covered skillet heat oil to medium high heat. Add the rice and broken pieces of angel hair pasta. Break into about 1 inch size pieces. Saute stirring frequently to slightly brown the rice and pasta, about 2-3 minutes. Add the stock and saffron. Cover and reduce heat to simmer. Cook at a simmer about 40-45 minutes until all the liquid is absorbed. Add peas and cook additional 3 minutes until the peas are heated through. Add salt and pepper to taste. Serve as side dish with fish or chicken.
