In celebration of St. Patrick's Day....this dish is commonly made with either kale or cabbage. |
List of Ingredients
1 lb potatoes, peeled and diced
1 lb kale, cut small (discard large stems)
1 lrg leek, sliced thin
1 T olive oil
1/2 c low fat buttermilk
Salt and pepper to taste
4 strips of cooked bacon, crumbled (optional) |
Preparation
Place potatoes in a large pot with enough water to cover the potatoes, bring to a boil. Let boil about 10 minutes or until potatoes are fork tender. In another pot bring water to a boil and then add the kale. Boil about 5 to 8 minutes then drain. In same pan, heat olive oil over medium heat and add the washed leeks. Let them cook until they are soft but not browned. Drain the potatoes and mash with the buttermilk until smooth. Add the kale, leeks and bacon if using. Add salt and pepper to taste.

This dish was made as a staple food year round because it is inexpensive to make and very tasty.
