This is one of our favorite dinners. Very simple, staples usually on-hand. I made this last night and it was 5 yummies for us both. We practice serious portion control so one potato for both is just about right. Add a slice of good garlic bread.

List of Ingredients
1 large baking potato (we prefer sweet potatoes or yams)


While the potato is baking, prepare the topping:

Garlic - plenty, minced (I used 3 cloves)
Onion - to taste, (I used one-half of a large sweet onion), rough chopped
Leftover chicken/turkey, whatever

1 can black beans (best if you have some from your crockpot but this is supposed to be quick and simple, remember?)
1 cup+ frozen corn (canned is ok too, just rinse and drain)
1 can fire-roasted tomatoes
1 t fresh minced jalepeno, or to taste
1 T olive oil
1 T fresh lime juice
1 1/2 t ground cumin
Salt, pepper and red pepper flakes to taste

Garnish:
Yogurt or sour cream
1/2 c mashed avocado with 1 t lime juice
2 T cilantro

I did not have an avocado or cilantro but it was still very good.

Preparation
Combine beans, tomatoes, corn, jalapeno, and olive oil in a large bowl. Using a medium non-stick skillet toast the cumin until it gives off its scent, about 20 seconds. Add to bean mixture and toss to mix.

Using the same skillet saute the garlic and onion in a little olive oil until soft, toss in the leftover chicken/turkey, add the bean mixture, toss lightly to combine all and heat through till warm.

To serve:
Cut potato(es) in half lengthwise and fluff the baked flesh with a fork. Top with some of the 'salsa', yogurt (or sour cream) and avocado. Sprinkle with cilantro.

Voila! very good and good for you too. If you use bright orange sweet potatoes this dish could be called Gypsy Baked Potatoes - it's so colorful. Lots of nutrition too.
