List of Ingredients
1 head iceberg lettuce (iceberg works best in this salad)
1 large jar marinated artichoke hearts (14.75 oz), broken into smaller pieces, with juice.
1 large can (soup can size) black olives
1/2 yellow bell pepper, chopped
1/2 orange bell pepper, chopped
1/2 large red onion, chopped
2 square packages of feta cheese
Red wine vinegar and olive oil to wet the salad
Salt and pepper to taste |
Preparation
There is no dressing for the salad, the red wine vinegar, olive oil and artichoke heart juice ARE the dressing.
Toss all but the liquid ingredients to jumble it all up, pour on some vinegar, olive oil and the juice, toss to evenly coat and let meld for an hour or two in the fridge before serving. | Cookbook Category Salad-Summer
