List of Ingredients
|2 T olive oil|
3 cloves garlic, minced
8 oz baby bella mushrooms, sliced
2 c yellow lentils, sorted and rinsed (I used brown lentils)
4 c vegetable broth
1 T fresh ginger, minced
Grated peel from one lemon (yellow part only)
1/4 c lemon juice
Salt and pepper to taste
Chopped cilantro and lemon wedges for garnish
|Heat olive oil in a large sauce pan. Saute garlic for one minute, add mushrooms and continue cooking until mushrooms have softened, 3 minutes or so. Add lentils and stir. Add broth.|
Simmer until lentils are tender, approximately 25 minutes.
Stir in ginger, lemon peel, lemon juice, salt and pepper.
Serve with cilantro and lemon wedges.
