List of Ingredients
6 med white onions
2 small cloves of garlic [Ed. note: More to taste....lots more]
Hot pepper flakes to taste
1/4 cup margarine or butter
Parmesan cheese |
Preparation
Place onions directly on the middle oven rack. Bake at 350° until tender, 30 - 40 minutes. Remove skins, place onions upright in serving dish. Cut onions into 1/4'ers about halfway through, separate slightly.
Cook garlic in margarine/butter over medium heat until garlic is golden brown, remove from heat. Pour over onions. Sprinkle Parmesan cheese on top of each one. Salt and pepper if desired.

What we do is core a large onion and stuff the middle with butter and minced garlic. Then we wrap it in double layers of aluminum foil and put it on the grill for about 45 minutes.

2 sweet onions (Vidalias of course if you can snag 'em)
Peel, cut top off and just enough of the root bottom so they will stand straight on a large piece of foil. Mix equal parts of Dijon mustard and honey and really slather it on. I use 1/4 cup of each for 1/2 cup total.
Wrap the foil around them and bake at 350° - same as Cathy's recipe above for 40 minutes. Ridiculously good.

Add a little Worcestershire to the butter and a beef bouillon to a Vidalia onion. Wrap and put on grill or in oven for 1 hour. Wonderful. |
