Steamed Whole Fish

Note from the Diva
If you're lucky enough to go fishing, you know exactly how old that fish is; if you have to buy fish, it's a much better deal to buy whole. The head and tail won't go to waste if you make a good fish stock later and freeze it.

You can use any whole fish . . . trout, rockfish, sea bass, you name it - today it was red snapper

List of Ingredients
Fresh gingeroot
scallions
lemon zest

chicken broth
a cup or so of white wine
1 TBLSP of sesame seed oil

bok choy

Preparation
Grate gingeroot, slice scallions, and remove zest from lemons.

Stuff inside fish.

Put the ends of the bok choy in the steamer for height.

Add chicken broth, white wine, and sesame seed oil to the bottom of the pan.

Add steamer rack

Layer bok choy and add fish on top



Cooking Time & Temperature
Bring to boil over medium heat, then simmer covered for about 12 minutes.
