Mini Blackberry Ice Cream Sandwiches with Blackberry Coulis

With dietary considerations small food have become popular. For weeks I have been developing this recipe and am quite pleased with the outcome. Occasionally enjoying a mini ice cream sandwich cannot be harmful. All things in moderation.

The liqueur amount can be increased in both the filling and the coulis.

Pre-chill serving dishes in the freezer.


List of Ingredients
One Recipe of Chocolate Icebox Cookies
Chocolate Icebox Cookies

Blackberry Coulis
1 pkg frozen blackberries, thawed
1/2 cup sugar
1 T cornstarch
1/4 cup Chambord Liqueur

Filling
2 cups whipping cream
1/4 cup sugar
1 tsp vanilla
1/4 cup Chambord Liqueur
2 T unsweetened cocoa powder
8 oz. mascarpone cheese

Fresh blackberries for garnish

Preparation
Blackberry Coulis
Press blackberries through a strainer; it should yield about 1 cup of juice; Stir together sugar and cornstarch well. Add to juice and heat in a sauce pan over medium heat until it comes to a boil. Reduce heat and simmer 2 minutes. Refrigerate for use later. When chilled add 1/4 cup Chambord.

Filling
Beat whipping cream until it forms soft peaks. Reduce spead and radually add sugar and then Chambord. Sift in cocoa powder. In a separate bowl beat the mascarpone cheese and beat a bit of the cream into it. Fold the whipped cream mixture into the cheese.

Put filling in a pastry bag and pipe a mound onto each cookie, topping with a second cookie and pressing slightly. At this point ice cream cookies can be placed in the freezer.

At serving time, nap plate with coulis, place one or two ice cream sandwiches on plate and garnish with fresh blackberries.
