My personal experience with cooking beans has been varied. Just the difference in the simmer setting from one stove to the next made a difference as well as setting an oven at 200 degrees F.

Amount of liquid has varied for me also.

Note from the Diva
If beans are soaked much longer than 8-10 hours they can absorb too much liquid and lose their flavor and texture.
If you wish to soak the beans and wait to cook them, drain the beans and store in the refrigerator until you are ready.


Quick Soak Method

Put the beans in a large pot, add water and bring up to a boil. let the water boil for 2 minutes and remove from heat. Cover the pot and let soak for one hour.

1 pound of soaked beans needs to cook in 4 quarts (16 cups) of water.

List of Ingredients
1 lb Great Northern beans, dried
Water
2 tsp salt
1 tsp baking soda

1/2 tsp mustard powder
1/8 cup molasses or sorghum
1/8 cu brown sugar
1 tsp celery salt
1/4 tsp black pepper
1 tsp. ginger powder
1/2 cup ketchup

1/4 lb salt pork or bacon

3/4 lb bacon, chopped fine, fried until crisp, and drained.

Preparation
Soak Beans
Wash beans and pick over, removing pebbles or dirt. place in a large pot and add cold water to cover. Soak overnight but no more than 8 to 10 hours.

Drain and add fresh water to cover. Add 2tsp salt and 1 tsp baking soda. Bring to a boil; reduce to a simmer for about 1 to 1 1/2 hours, adding more liquid if necessary.

Put beans and liquid into a large oven-proof pot. Add mustard, molasses, brown sugar, celery salt, pepper, ginger powder, and ketchup.

Stir to combine and bake at 200 degrees, uncovered, until beans begin to simmer, about 45 minutes to an hour.

Cover and bake 6-10 hours, adding more liquid as necessary. Do not stir because you don't want to break up the beans.
It is important to check periodically to add more water, if necessary. Beans absorb a lot of water

200 degrees F. for 6-10 hours.
