Recipe Title: Herb Scented Grilled Veal Chops

The secret of Veal chops is quick searing and slow grilling until the chopped are just blushed with pink inside. Other herbs that can be used to scent the veal would include thyme and rosemary.

List of Ingredients
4 8-10 oz veal chops
1/4 cup olive oil
1/3 cup fresh lemon juice
1 clove of garlic, crushed
2 T chopped fresh thyme
2 T minced shallot

Gremolata

Leaves from 1 bunch of flat-leaf parsley
1/2 cup pine nuts, toasted at 400°F. for 2 minutes
Zest of 1 lemon
1 tsp minced garlic
1/4 cup freshly grated horseradish
Kosher salt and freshly ground black pepper

Preparation
For veal:
Whisk first 5 ingredients in small bowl to blend. Place veal chops and mixture in a zip lock back and refrigerate a minimum of 1 hour and no longer than overnight. Turn bag occasionally.

Soak fresh rosemary, thyme or sage leaves in water.

Prepare grill on high heat. Drain veal chops and place on the grill. Grill one minute on each side; then remove and reduce the heat to medium. Put the chops back on the grill and grill until almost cooked through. For 1 ½ “ chops it should take about 4 minutes per side.
If you use a little salt, now is the time to do your salting.

Put the wet herb of your choice on the hot coals or, if using a gas grill, lay on foil and place on the flavor bars. You can skip this step if fresh herbs are not readily available.

Transfer chops to serving platter. Garnish with Red Bell Pepper Chutney and Gremolata

For gremolata:
Make the gremolata just before the meat is placed on the grill. In a small bowl, combine the parsley leaves, pine nuts, lemon zest, and horseradish and mix well by hand. Sprinkle with a little salt and pepper and set aside.

Cooking Time & Temperature
4 minutes each side for Medium Rare. . Internal temperature should read 145 °F (medium rare), 160 °F (medium), or 170 °F (well done).
