Recipe Title: Bold Citrus Shrimp

List of Ingredients
2 pounds uncooked jumbo shrimp
2/3 cup lemon juice
1/3 cup lime juice
3 tbs brown sugar
3/4 tsp ground ginger
1 jalapeno pepper, seeded and diced
2 tbs grated lemon peel
4-1/2 tsp grated lime peel
1 tbs whole white peppercorns, crushed
3/4 tsp salt
4 tbs olive oil, divided

Preparation
Peel and devein shrimp leaving the tails on. Butterfly shrimp along outside curve.

In a small saucepan, combine the lemon juice, lime juice, brown sugar and ginger. Bring to a boil, cook until liquid is reduced by half, about 10 minutes. Stir in the jalapeno, lemon peel, lime peel, peppercorns and salt, cook 1 minute longer. Remove from heat. Stir in 1 tbs olive oil. When cool, coat shrimp with sauce mixture.

In a large skillet, cook shrimp in remaining oil in batches over medium high heat for 1-2 minutes on each side or until shrimp turn pink.


(I also make some brown rice and place the shrimp over it. The rice absorbs all the citrus flavor)
