Recipe Title: Simple Solutions -Tropical Coconut Custard

When cooking for two this recipe can be cut in half. Just freeze the other half of the cream of coconut as it is not available in a smaller size.

List of Ingredients
2 cups milk
1/3 cup cornstarch

15 oz. can cream of coconut

1tsp vanilla or rum extract
1 can pineapple rings

Toasted coconut

Preparation
Set out 6 5-oz. custard cups; Place a pineapple ring on the bottom of each cup.
In a sauce pan, slowly whisk the milk into the cornstarch. Whisk in the Cream of coconut. Bring to a boill, stirring constantly. Reduce heat and simmer, stirring constantly for 2 minutes.

Remove from heat and stir in the vanilla or rum extract.

Divide mixture equally between the custard cups.

Chill until firm, about 3 hours.

When ready to serve, invert onto serving splates and sprinkle with toasted coconut.

Cooking Time & Temperature
Bring to a boil and simmer 2 minutes.
Chill 3 hours
