Recipe Title: Lemon Fruit Salad Dressing

Note from the Diva
This light, tangy, slightly sweet topping for fruit salad is always enjoyed by guests here. Try it for Thanksgiving or your next dinner with guests. Will keep well in the refrigerator for several days.

List of Ingredients
1 beaten egg plus 1 egg yolk
Grated rind of 1 lemon
1 Tbsp fresh lemon juice
2 Tbsp white vinegar
1/2 C sugar
1/2 pt whipping cream

Preparation
Beat egg and yolk together. Add egg, lemon juice, lemon rind, vinegar, and sugar to top of double boiler. Mix until sugar dissolves. Stir often over medium to medium- low heat until thickened to soft pudding consistency. Cool.

Prepare whipped cream as sauce cools. Fold cooled lemon sauce into cream. Serve over fruit salad on a bed of lettuce.

Cooking Time & Temperature
Under ten minutes til thickened. Medium, medium-low temp.
