This is a delicious way to use leftover cooked turkey. You may substitute cooked chicken or crabmeat for the turkey, of course. Other cooking oil may be susbstituted for lard.

List of Ingredients
For the sauce

6 poblano chilies (large green chilies - look like elongated bell peppers)
1 10-ounce can, Mexican green tomatoes (tomatillos) OR
6-8 fresh tomatillios-husked, gently boiled and drained*
*reserve some of the cooking water, in case needed as described below)

3 sprigs, fresh cilantro
2 teaspoons, ground coriander
1 cup, heavy cream
1 egg - lightly beaten
salt and fresh pepper to taste

For the enchiladas

3 tablespoons, lard or vegetable shortening (or as needed)
24, 4-inch corn tortillas (or fewer, larger corn tortillas)
about 6 cups, shredded or chopped cooked turkey
1-2 large (8-ounce) packages, cream cheese
1 onion - finely chopped
1/4 cup, shredded Parmesan cheese
salt and fresh pepper to taste

For garnish
shredded iceburg lettuce
sliced black olives
sliced radishes
sliced jalapeno chiles
sour cream, if desired

Preparation

Remove the stems from the poblano chiles, and cook the chiles in boiling, salted water until very tender.
Drain well, then puree the chiles in a blender or food processor with the tomatillos, cilantro, coriander and enough liquid from the tomatillos (canned juices or cooking water) to make a thick puree. [Note: extra liquid may or may not be needed.]

Blend the cream with the eggs and add to the chile puree. Season with salt and pepper.

Blend together the cooked turkey, cream cheese, onion, Parmesan cheese and salt and pepper to taste.

Compose the enchiladas
Spread a thin layer of the sauce over the bottom of a shallow baking pan (about 9” X 11”). In a skillet, melt the lard. Dip the tortillas, one at a time, into the sauce, then fry on both sides until limp. Spread each tortilla with the turkey filling mixture and roll up. Place each roll into the prepared baking pan.

When all the tortillas have been filled, pour the remaining sauce over the enchiladas. May be made ahead to this point.

Finish and serve: Preheat oven to 350 degrees. Place filled pan of enchiladas in oven until heated through. Remove enchiladas from oven and garnish with shredded lettuce, sliced olives, radishes and jalapenos. Serve with sour cream if desired.

Bake at 350 degrees F. until heated through.
