Recipe Title: Pumpkin Creme Brulee

Note from the Diva
Dark rum can be substituted for Grand Marnier. 1 1/2 Pumpkin Pie Spice can be substituted for the spices.

This could be prepared in small pumpkins; Cut the tops off & clean out the insides; sprinkle with cinnamon & sugar. Wrap in foil and place on a baking sheet in a 300 degree F. oven for 30 minutes. Cool
Remove foil when ready to bake the brulee.

List of Ingredients
2 cups heavy cream
1/4 cup brown sugar
1/4 cup white sugar
1/2 tsp vanilla
1 tsp cinnamon
1/8 tsp nutmeg
1 pinch ginger
1 pinch ground cloves

8 egg yolks

1cup canned pumkin puree, pushed through a strainer (this will result in 3/4 cup pumpkin)
2 T Grand Marnier

Preparation
In a medium sauce pan combine the first 8 ingredients. Bring the mixture to a slow simmer just to dissolve the sugar and remove from the heat. It can sit for 15 minutes for the spices to be infused.

In a small bowl, beat the 8 egg yolks until frothy and lemon colored. Whisk the strained pumpkin and Grand Marnier into the egg yolks.

Whisking constantly, slowly add the beaten egg yolk/pumpkin mixture.

Preheat the oven to 325 degrees F. and arrange 8 ramekins or custard cups in a large metal baking pan.

Divide the mixture evenly amongst the cups. Place in the oven and pour boiling water into the pan holding the cups until halfway up the sides of the cups.

Bake until set but a bit soft in the middle; 30 to 40 minutes. The center should jiggle slightly when you shake the pan.

Remove the cups from the water bath and let cool 15 minutes; cover tightly with plastic wrap and refrigerate at least 3 hours or overnight.

When ready to serve, remove plastic wrap and push brown sugar through a strainer making an even layer over each cup. Place under a broiler for several minutes, watching it constantly so it doesn't burn. It will melt and turn into a crunchy, hard surface.
Alternatively, a kitchen torch may be used.

Cooking Time & Temperature
325 degrees F for 30 - 40 minutes until set and center is still jiggly.
