I sometimes add chopped/diced ham and extra Broccoli florets and top with Parmesan or Asiago cheese.
I also Double the recipe, as I can eat it daily in the colder months.
A great soup for anyone that is sick. |
List of Ingredients
14oz Can of Chicken Stock
10oz frozen Package of Chopped Spinach
10oz frozen Package of Chopped Broccoli
3-4ounces shredded Cheddar Cheese
3/4c Cream or Half & Half
Minced Garlic and chopped Onion - Optional
Butter or Ghee for sauteing |
Preparation
Thaw, and drain the the spinach and broccoli.
heat fat in a skillet – add onions and garlic if desired, add the veggies.
Cook until well heated. Add all ingredientsto a blender; blend, liquefy etc.
