Recipe Title: Creamed Corn Contributed by: TwinLakesChef

Gulliver's Restaurant, located near John Wayne Airport is famous for it's Prime Rib but their creamed corn is almost as famous. The only thing I changed in the recipe is adding a bit of cayenne pepper. |
Note from the Diva
If using fresh corn you might want to leave out the sugar. It seems these days you can rarely buy yellow corn fresh. Growers choose to grow the bi-color corn which is much sweeter than yellow. Bi-color comes on sooner and produces longer than yellow.
The bi-color is so sweet, added sugar is not necessary. |
List of Ingredients
1 pkg. frozen cut corn
2 T flour
2 T butter
1 c. heavy cream
1/2 tsp salt
2 T sugar
1/8 tsp. cayenne pepper
white pepper
Optional: fresh parmesian cheese for garnish. |
Preparation
Melt butter in sauce pan over low heat and stir in flour until smooth. Let simmer for 2-3 minutes.
Slowly add cream, stirring constantly. Stir and cook over medium heat until thickened.
Reduce heat; add salt, sugar, corn, cayenne, & white pepper. Simmer 5 minutes until heated through and sauce is bubbling. If sauce is too thick, you may add more cream or milk.
Before serving, put in an oven proof serving dish, sprinkle over with fresh parmesian. Put under broiler to melt the cheese. |
