List of Ingredients
1 1/2 lbs boneless beef chuck --cut into 1 inch cubes, fat trimmed.
salt and pepper
flour
1 1/2 tbsp butter
1 onion finely chopped
4 cloves garlic minced
1 tsp salt
1 tsp ground cumin
1 tsp chili powder
1 can (1lb) whole peeled tomatoes coarsely chopped and their liquid
1 small can green chiles, seeded and chopped
1 can red kidney beans
1 can black beans
1 can pinto beans
1 can chili beans
1 cup cheddar cheese, grated |
Preparation
Sprinkle beef cubes with salt and pepper, coat lightly with flour shaking off excess and brown in a large fry pan on all sides in butter.
Add onion and cook until soft and lightly browned
Add garlic, salt, cumin, chili powder, tomatoes, and green chiles
Bring to boiling, then reduce heat and simmer until beef is tender
Add all 4 cans of beans and continue cooking, stirring occasionally until slightly thickened. -approx 20 mins
Add 3/4 cup shredded cheese and stir until completely melted.
Serve and garnish with remaining cheese and chopped onion
