Oh I can't WAIT to see everyone's secrets Big Grin

I grate fresh nutmeg into any pasta I make and also into any dark greens.

A squirt of ketchup into ham and bean soup adds some depth too!

A quick squeeze of lemon juice on almost any vegetable I cook - really brightens the flavor.

And speaking of lemons - if you're grilling fish, go ahead and cut some lemons and grill them for a few minutes cut side down. The taste is amazing squeezed over the fish or seafood.

LOL.. I don't put it in everything, but yes, sauerkraut is absolutely vital to one of our favorite recipes, the MMMeatballs that have won over even avowed sauerkraut haters!

See http://cubits.org/YumYum/thread/view/216/

(Dea, maybe that thread could move to the "appetizers" forum sometime? I had to hunt it up.)

Tarragon - I will give it up! It's my secret ingredient in any chicken salad I make and everyone always asks me for the recipe.

Tarragon is a good one! Tarragon and shallots are the two key ingredients in "Sunny Paris," another favorite blend from Penzey's (try it in any egg dish, or sprinkle it on a bagel with cream cheese)

Steak Tenderizer....My DH told me one time.."Don't let me catch you putting that on my steak"....Well, I never let him catch me. The kids called it "Mom's secret ingredient"....

I would sprinkle some on the steak...then sprinkle it with some garlic salt....while slipping the tenderizer bottle into my apron pocket.

Then he would see me "forking" that steak all over..he;d tell me that did no good...I would ask him if the steaks weren't tender...Yes...he agreed they were...so he let me go on sticking that fork in his steak!! Whistling

Add just a slight quarter teaspoon Curry powder to Chicken salad with diced celery. It taste like you have pecans in it. A little Curry powder goes a long way. Smiling

Taggets, a restaurant near us used to have a chicken salad with pineapple, pecans and curry in it...Oh, it was SO good. By the way, Ed Callan, a local longhorn rancher not far from here, has a longhorn he has trained to be ridden. :)

Sorry to hijack a thread for Secret Ingredients but I might be able to help out GardenWife to duplicate the salad she tasted.

Use this recipe and substitue pineapple for the grapes; that will come pretty close

And after you've made it and tasted it; tweak it to make it YOURS!

Martini & Rossi Dry Vermouth to any dish needing a deeper meat taste. Especially good in beef stew and chicken pasta. Must be this brand others do not have the same herbs in them.

I also use applesauce or fruit baby food for cakes and muffins. Reduces the amount of fat but you must watch the amount of other liquid you add.

A simple vinaigrette made with maple syrup aged in bourbon barrels.

Think... injecting it into perfectly poached eggs served with crispy-skinned roasted duck breast.

Blissful.
