|â€‹In our never ending quest to eat healthy we fell in love with kale so when I ran across this recipe from the Mr. Food test kitchen I knew I had t try it. With the first bite into this moist bread I knew I had a keeper and the aroma of olive oil and garlic filled the kitchen
2 1/2 cups all purpose flour
1tabeespoon baking powder
1 teaspoon garlic powder
1 teaspoon salt
2 1/2 cups shredded kale
1 cup shredded feta cheese
1/2 cup olive oil
3/4 cup Greek yogurt
3/4 cup milk
1/4 cup chopped walnuts (optional)
Preheat oven to 350 degrees and coat a 9 x 5 inch loaf pan with coking spray.
In a large bowl, combine flour, baking powder, garlic, and salt. Stir in kale and eta cheese.
In a medium bowl. whisk oil, eggs, yogurt, and milk. Pour into dry ingredients and mix until well combined.
Pour batter into loaf pan and sprinkle with walnuts if using.
Bake 45 to 50 minutes, or until a toothpick inserted into center comes out dry.
Let sit for 10 minutes then remove to wire rack to cool completely.
Note - I used almost half a 16 ounce of bag of frozen kale. Just took it right out of the bag, still frozen and used my food processor to shred it.
I had to bake it an extra 10 minutes before it was dry inside and then I put in under the broiler for a few minutes to get a nice color to it
