|This is by far my favorite chicken recipe
Chicken With Onions
6 boneless, skinless chicken breasts (3 to 4 pounds, washed and patted dry)
1 stick of butter
2 large onions, chopped
2 cups plain bread crumbs
Salt and pepper to taste
2 eggs, beaten
6 tbls oil for frying
Preheat oven to 350 degrees
Add the flour, salt and pepper to the bread crumbs and mix well.
Dip chicken into eggs and then into bread crumbs.
Heat oil in a fry pan over medium high heat and cook chicken until it is a light golden in color.
Remove chicken and place into a 9 x 13 inch baking dish.
Melt butter in fry pan and saute onions until the begins to get a slight tan in color.
Pour the onions over the chicken. Cover with foil and bake for 45 minutes. Uncover and cook for an additional 15 minutes.
