|Looks like a good busy family recipe. I wonder how it would taste with a jar of salsa added in near the end of the simmering, instead of tomatoes and green chiles. I have also prepared all kinds of dishes, from short to involved, and find the quicker ones to be best for now. As my son grows older and can concentrate for longer, we may move up the cooking scale.
If you want to assuage your desire for effort on this recipe, use home made pasta - lots of fun to make with little ones, and very tasty. I bet it would be good on just about any pasta.
